  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

  • All-purpose flour: 2 ¾ cups
  • Warm milk: 1 cup (105-115°F)
  • Active dry yeast: 2 ¼ teaspoons (1 packet)
  • Granulated sugar: ¼ cup (for dough)
  • Large egg: 1, beaten
  • Unsalted butter: ¼ cup (melted)
  • Salt: ½ teaspoon
  • Raspberry or strawberry jelly/jam: ½ cup

Instructions

  1. Step 1: In a large bowl, combine the warm milk, yeast, and 1 teaspoon of the granulated sugar. Stir gently and let sit for 5-10 minutes until foamy. Add the beaten egg, melted butter, remaining granulated sugar, and salt to the yeast mixture, stirring well to combine.
  2. Step 2: Gradually add the all-purpose flour to the wet ingredients, mixing with a spoon or a stand mixer with a dough hook until a shaggy dough forms. Knead the dough on a lightly floured surface (or in the stand mixer) for 5-7 minutes until it is smooth and elastic.
  3. Step 3: Place the dough in a lightly oiled bowl, turning once to coat. Cover the bowl with plastic wrap or a clean kitchen towel and let it rise in a warm place for 1 to 1.5 hours, or until it has doubled in size.
  4. Step 4: Gently punch down the risen dough. On a lightly floured surface, roll the dough to about ½-inch thickness. Using a 3-inch round cutter, cut out donut shapes. Place these cutouts on small squares of parchment paper, cover lightly, and let them rise again for 20-30 minutes, or until visibly puffy.
  5. Step 5: Preheat your air fryer to 325°F (160°C). Lightly spray the tops of the donuts with cooking spray or brush with a little melted butter. Carefully place 2-3 donuts (still on their parchment squares) into the air fryer basket, ensuring they are not touching. Air fry for 4-6 minutes, flipping halfway through, until they are golden brown and cooked through. Repeat with the remaining donuts.
  6. Step 6: Let the air-fried donuts cool for a few minutes. Using a small knife or a piping bag tip, poke a hole into the side of each donut. Fill a piping bag fitted with a small round tip with the jelly/jam. Pipe about 1-2 tablespoons of jelly into each donut. Immediately roll the filled donuts in granulated sugar or powdered sugar to coat before serving warm.

Notes

  • For optimal freshness, store any leftover unfilled donuts in an airtight container at room temperature for up to 2 days; filled donuts are best enjoyed within a day, as the jelly can make them soggy.
  • To enjoy that fresh-baked warmth again, gently reheat leftover donuts in your air fryer at 300°F (150°C) for 1-2 minutes, or a quick 10-15 second burst in the microwave, being careful not to overcook.
  • Serve these warm, pillowy jelly donuts with a dusting of extra powdered sugar and a strong cup of coffee or a cold glass of milk for the ultimate comforting treat.
  • For an easier and smoother filling experience, gently warm your jelly in the microwave for 10-15 seconds before piping, which helps it flow effortlessly into the donuts without resistance.
