Ditch the boring classic! This twist features creamy melted marshmallows infused with tropical coconut extract and toasted flakes. Fast melt method ensures perfection.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 4 tablespoons (1/2 stick) unsalted butter
  • 1 (10 ounce) bag miniature marshmallows
  • 1 teaspoon coconut extract
  • 1/4 teaspoon fine sea salt
  • 6 cups puffed rice cereal (like Rice Krispies)
  • 1 cup sweetened shredded coconut, lightly toasted
  • 1/4 cup cream of coconut (optional, for extra richness)

Instructions

  1. Step 1: Prepare a 9×13 inch baking pan by lining it with parchment paper, leaving an overhang on the sides for easy removal, or grease it lightly with butter or cooking spray. Lightly toast the shredded coconut in a dry skillet over medium heat until fragrant and slightly golden (about 3-5 minutes), then set aside.
  2. Step 2: In a large saucepan, melt the butter over low heat. Once the butter is melted, add the salt. Add the marshmallows and stir continuously until they are completely melted and the mixture is smooth. Remove the pan from the heat immediately.
  3. Step 3: Quickly stir in the coconut extract and the optional cream of coconut until fully incorporated. Gently fold in the 6 cups of puffed rice cereal and the reserved toasted shredded coconut until everything is evenly coated with the marshmallow mixture.
  4. Step 4: Transfer the mixture into the prepared pan. Using a buttered spatula or a sheet of wax paper, gently and evenly press the mixture into the pan. Do not compact the mixture too firmly, as this can result in dense, hard treats.
  5. Step 5: Allow the treats to cool completely at room temperature for at least 1 hour. Once set, use the parchment paper overhang to lift the treats out of the pan. Cut into squares and store in an airtight container.

Notes

  • Store treats layered with wax or parchment paper in an airtight container at room temperature for up to 3 days to maintain their perfect soft chewiness.
  • If the treats harden after a day or two, microwave a single square for just 5-8 seconds to restore its delightful gooey texture.
  • For a decadent presentation, drizzle the cooled treats with melted dark or milk chocolate before cutting, or top them with a sprinkle of lime zest for brightness.
  • Remember the golden rule for light, chewy treats: Gently press the mixture into the pan using minimal pressure to avoid overly dense or brick-like squares.
