- 9 slices Texas Toast or thick-cut bread
- 6 strips thick-cut turkey bacon
- 4 oz smoked turkey breast, thinly sliced
- 2 slices Pepper Jack cheese
- 3 Tbsp Chipotle Mayonnaise or BBQ Ranch dressing
- 4 leaves Romaine lettuce
- 4 slices ripe tomato
- 2 Tbsp unsalted butter
Instructions
- Step 1: Cook the turkey bacon until crisp in a skillet or oven. While the turkey bacon cooks, lightly butter one side of all 9 slices of bread. Set the cooked turkey bacon aside on a paper towel to drain.
- Step 2: Toast the buttered bread slices on a griddle or large skillet over medium heat until golden brown (about 1-2 minutes per side). If desired, place the two slices of Pepper Jack cheese on two of the toasted middle slices of bread and lightly melt.
- Step 3: Lay out all 9 toasted slices. Spread a thin layer of Chipotle Mayonnaise on the non-buttered side of six slices of bread, reserving the final three top slices for later.
- Step 4: Build the first layer: On the three bottom slices, stack the sliced smoked turkey, one-third of the turkey bacon strips, and two tomato slices. Top each with one of the reserved, cheese-melted middle slices of bread.
- Step 5: Build the second layer: On the newly placed middle slices, stack the remaining beef bacon strips, romaine lettuce leaves, and the remaining two slices of tomato. Top each assembly with the final slice of toasted bread, secure with long toothpicks, and slice the sandwiches diagonally into quarters.

- If preparing ahead of time, store the toasted Texas Toast and the wet fillings (mayonnaise, tomato, lettuce) separately; assemble the sandwich just before serving for maximum crunch.
- This sandwich is best enjoyed fresh, but if you have leftover turkey turkey bacon, a quick 60-second burst in a toaster oven will perfectly re-crisp it for your second serving.
