- 1 (14-16 ounce) bag frozen tater tots
- 1 (12-14 ounce) package vegan ground plant-based crumble
- 1 small yellow onion, diced
- 1 medium bell pepper (any color), diced
- 1/2 cup unsweetened plant milk (e.g., almond, soy, oat)
- 1 cup vegan shredded cheddar-style cheese, divided
- 1 teaspoon garlic powder
- 1/2 teaspoon salt, or to taste
Instructions
- Step 1: Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
- Step 2: In a large skillet over medium-high heat, cook the vegan ground crumble according to package directions until browned. Add the diced onion and bell pepper to the skillet, cooking until softened, about 5-7 minutes.
- Step 3: Reduce heat to medium-low. Stir in the plant milk, garlic powder, and salt with the cooked crumble and vegetables. Simmer for 2-3 minutes until slightly thickened, stirring occasionally.
- Step 4: Spread the vegan ground and vegetable mixture evenly into the prepared baking dish. Sprinkle half of the vegan shredded cheese (1/2 cup) over the mixture, then arrange the frozen tater tots in a single layer on top.
- Step 5: Bake for 25-30 minutes, or until the tater tots are golden brown and crispy. Remove from oven, sprinkle the remaining 1/2 cup of vegan cheese over the top, and return to the oven for another 5-7 minutes, or until the cheese is melted and bubbly.
- Step 6: Let the casserole rest for 5-10 minutes before serving to allow it to set. Serve warm.
Notes
- Leftovers keep wonderfully! Once completely cooled, cover the casserole tightly and refrigerate for up to 3-4 days.
- For the best crispness, reheat individual servings in a toaster oven or conventional oven at 350°F (175°C) until warmed through, or microwave for a quick bite.
- Elevate your breakfast bake by serving it with a dollop of vegan sour cream or a sprinkle of fresh chopped chives and a side of hot sauce for an extra kick!
- To infuse even more flavor into your base, try adding a pinch of smoked paprika or a dash of vegan Worcestershire sauce to the crumble mixture during Step 3 – it adds wonderful depth!
