  • 1 medium bell pepper (any color), diced

  • 1 cup vegan shredded cheddar-style cheese, divided
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt, or to taste

Instructions

  1. Step 1: Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Step 2: In a large skillet over medium-high heat, cook the vegan ground crumble according to package directions until browned. Add the diced onion and bell pepper to the skillet, cooking until softened, about 5-7 minutes.
  3. Step 3: Reduce heat to medium-low. Stir in the plant milk, garlic powder, and salt with the cooked crumble and vegetables. Simmer for 2-3 minutes until slightly thickened, stirring occasionally.
  4. Step 4: Spread the vegan ground and vegetable mixture evenly into the prepared baking dish. Sprinkle half of the vegan shredded cheese (1/2 cup) over the mixture, then arrange the frozen tater tots in a single layer on top.
  5. Step 5: Bake for 25-30 minutes, or until the tater tots are golden brown and crispy. Remove from oven, sprinkle the remaining 1/2 cup of vegan cheese over the top, and return to the oven for another 5-7 minutes, or until the cheese is melted and bubbly.
  6. Step 6: Let the casserole rest for 5-10 minutes before serving to allow it to set. Serve warm.
