Ingredients
Scale
- 1 cup cottage cheese (full fat or 2%)
- 1/2 cup vanilla protein powder
- 1/4 cup quick-cooking rolled oats
- 2 tablespoons maple syrup (or honey)
- Zest of 1 whole lemon
- 1 tablespoon fresh lemon juice
- 1/4 cup fresh or frozen (thawed and patted dry) blueberries
- 1 teaspoon chia seeds
Instructions
- Step 1: Place the cottage cheese into a food processor or a high-powered blender and process for 1-2 minutes until it is completely smooth and creamy, ensuring no curds remain.
- Step 2: Add the vanilla protein powder, quick oats, maple syrup, lemon zest, lemon juice, and chia seeds to the processed cottage cheese. Pulse or mix thoroughly until a thick, uniform dough consistency is achieved.
- Step 3: Gently fold in the blueberries using a spatula. Mix minimally to distribute the berries without crushing them too much, which prevents the mixture from turning purple.
- Step 4: Cover the bowl and refrigerate the mixture for at least 30 minutes (or up to 1 hour). This chilling time allows the oats and chia seeds to absorb moisture, making the dough firm enough to roll.
- Step 5: Scoop the chilled dough using a small cookie scoop or spoon (about 1 tablespoon per bite) and roll it into smooth, uniform balls approximately 1 inch in diameter.
- Step 6: Serve immediately or store the protein bites in an airtight container in the refrigerator for up to 5 days.
Notes
- Since the bites contain fresh dairy, keep them tightly sealed in an airtight container in the refrigerator and enjoy within 5 days for best flavor and texture.
- As these are meant to be enjoyed cold, skip the reheating; if you store the bites in the freezer, thaw them in the fridge overnight before serving.
- Elevate the presentation and flavor by dusting the finished bites lightly with extra powdered vanilla protein powder or finely shredded coconut right before serving.
- For maximum smoothness, ensure your cottage cheese is processed for the full 1-2 minutes until absolutely no curds or graininess remain before incorporating any dry ingredients.
