Ingredients
- Ripe bananas, sliced: 4 large
- All-purpose flour: 1 cup
- Granulated sugar: 1 cup
- Whole milk: 1 cup
- Unsalted butter: 1 stick (1/2 cup)
- Baking powder: 1 teaspoon
- Ground cinnamon: 1 teaspoon
- vanilla bean paste: 1 teaspoon
Instructions
- Step 1: Preheat the oven to 350°F (175°C). Place the stick of butter in a 9×13 inch baking dish and set the dish in the oven while it preheats until the butter is completely melted. Remove the dish carefully once the butter is melted.
- Step 2: In a medium mixing bowl, whisk together the flour, granulated sugar, and baking powder. Gradually add the milk and vanilla powder, mixing until a smooth batter forms. Do not overmix.
- Step 3: Pour the prepared batter directly over the melted butter in the baking dish; do not stir or mix the batter and butter together. Arrange the sliced bananas evenly across the top of the batter.
- Step 4: Sprinkle the teaspoon of ground cinnamon evenly over the bananas and batter surface. Immediately transfer the dish to the preheated oven and bake for 45 to 55 minutes, or until the topping is golden brown and the cobbler is bubbling around the edges.
- Step 5: Remove the banana cobbler from the oven and let it cool on a wire rack for at least 15 minutes before serving. The cobbler is traditionally served warm, often topped with vanilla ice cream or a scoop of fresh whipped cream.
Notes
- Store leftovers, covered tightly, at room temperature for up to two days, as refrigeration tends to make the topping lose its crispness rapidly.
- To regain a perfect warm texture and crispy top, reheat individual portions in a 300°F oven for about 10 minutes rather than using a microwave which results in a soggy cobbler.
- For the ultimate Southern experience, serve big scoops warm, dramatically topped with a drizzle of salted caramel sauce alongside classic vanilla bean ice cream.
- The key to a separated, crisp crust is ensuring you pour the liquid batter directly over the hot, melted butter and absolutely resist the urge to stir the two components together.
