Ingredients
Scale
- 1 cup unsweetened plant-based milk (almond, soy, or oat recommended)
- 1/4 cup all-purpose flour
- 2 tablespoons maple syrup (plus more for serving)
- 1 teaspoon vanilla bean paste
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 6–8 slices day-old bread (challah, brioche, or sturdy sandwich bread works best)
- 1–2 tablespoons vegan butter or coconut oil, for cooking
Instructions
- Step 1: In a shallow dish or pie plate, whisk together the plant-based milk, all-purpose flour, 2 tablespoons maple syrup, vanilla powder, ground cinnamon, and salt until smooth and well combined.
- Step 2: Heat a large non-stick griddle or skillet over medium heat. Add 1-2 tablespoons of vegan butter or coconut oil and allow it to melt and coat the surface.
- Step 3: Dip each slice of bread into the prepared batter, allowing it to soak for about 10-15 seconds per side. Ensure both sides are evenly coated but not overly saturated.
- Step 4: Carefully place the batter-coated bread slices onto the hot griddle, ensuring not to overcrowd the pan. Cook for 3-4 minutes per side, or until golden brown and slightly crispy.
- Step 5: Remove the cooked French toast from the griddle and transfer to a plate. Repeat with any remaining bread and batter, adding more vegan butter or oil to the pan as needed.
- Step 6: Serve immediately with your favorite toppings such as additional maple syrup, fresh berries, powdered sugar, or a dollop of vegan whipped cream.
Notes
- Keep any uneaten French toast fresh for up to 2-3 days by storing it in an airtight container in the refrigerator, ideally with parchment paper separating the slices to prevent sticking.
- For a delightful crisp finish, gently reheat your leftover French toast in a toaster oven or on a baking sheet in a 350°F (175°C) oven for 5-8 minutes, rather than microwaving, which can make it soft.
- Beyond the classic maple syrup and berries, try a sprinkle of toasted shredded coconut or a dollop of dairy-free lemon curd for a burst of unexpected flavor and texture.
- A key to perfect French toast is using slightly stale or day-old bread; it soaks up the plant-based batter beautifully without falling apart, ensuring a golden, crisp exterior and a wonderfully tender center.
